Chocolate-Dipped Orange Biscotti recipe
Citrusy and chocolaty in one, these orange-infused biscotti are divine.
Ingredients:
2/3 cup sugar
2 eggs
½ cup vegetable oil
1 tablespoon grated orange zest
1 ½ teaspoons vanilla
2 ½ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
4 ounces semisweet chocolate, melted
Grated orange zest, for garnish
Directions:
1) Preheat oven to 350°F. Lightly grease a baking sheet.
2) In a large bowl, beat sugar and eggs until fluffy. Add oil and beat until smooth. Add zest and vanilla; beat well.
3) In a separate large bowl, sift together flour, baking powder, baking soda, and salt. Add to egg mixture; beat until just mixed.
4) On a lightly floured surface, knead dough until smooth, about 10 times. Divide dough in half; shape each half into a rectangle 10-by-13 inches. Transfer to prepared baking sheet.
5) Bake 30 minutes, until a toothpick inserted in the center comes out clean. Cool 15 minutes on baking sheet. Cut each rectangle into ½-inch slices; replace on baking sheet, cut side down.
6) Bake an additional 15 minutes, turning once, until crisp and light brown. Remove from oven.
7) Dip each piece into melted chocolate; sprinkle with orange peel. Place on wax paper to cool completely.
