Dried Cherry Biscotti recipe
These crumbly biscotti have a hint of sweet-tart cherries inside. Serve these with a hot cup of spiced chai or tea.
Ingredients:
3 eggs
1 cup sugar
1 teaspoon vanilla
2 ½ cups flour
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
2/3 cup chopped dried cherries
1 cup ground almonds
Directions:
1) Preheat oven to 350°F. Lightly grease a baking sheet.
2) In a large bowl, beat eggs, sugar, and vanilla until fluffy. In a separate large bowl, sift together flour, baking soda, baking powder, and salt. Add to egg mixture; beat until just mixed. Stir in cherries and almonds.
3) Turn dough out onto a lightly floured surface; knead 10 times, until dough holds. Divide dough in half; form two flat logs about 9-inches long and 3-inches wide each.
4) Bake 25 minutes, until lightly browned. Cool 10 minutes on baking sheet; reduce oven temperature to 325°F.
5) Cut logs on the diagonal into ½-inch thick slices. Return to baking sheet; bake an additional 10 minutes, turning once. Cool on a wire rack.
