Fig Biscotti recipe
Silently sophisticated, these biscotti have not only figs inside, but two forms of chocolate. These can easily double as a light dessert, served with hot cocoa or espresso.
Ingredients:
1 ½ cups all-purpose flour
2 tablespoons unsweetened cocoa powder
½ teaspoon baking powder
½ teaspoon salt
3 eggs
2/3 cup sugar
1 cup dark chocolate chips
½ cup finely chopped dried figs
Directions:
1) Preheat oven to 375°F. Lightly grease a baking sheet.
2) In a large bowl, sift together flour, cocoa, baking powder, and salt. In a separate large bowl, beat eggs and sugar together until fluffy, about 5 minutes. Add flour mixture, chocolate, and figs; blend until just mixed.
3) Roll dough onto lightly floured surface; knead 10 times, until dough holds. Divide dough in half; shape each into two long logs.
4) Place logs on prepared baking sheet; flatten gently with hands. Bake 20 minutes, until golden. Cool 15 minutes on sheet; reduce oven temperature to 300°F.
5) Cut logs into 1.2-inch thick slices cut on the diagonal. Replace on baking sheet, cut side down; bake 15 minutes, turning once. Cool on a wire rack.
