Ginger Orange Biscotti recipe
Ingredients:
1 ½ cups of all-purpose flour.
1 cup of sugar.
½ cup of cornmeal.
2 teaspoons of ground ginger.
1 teaspoon of baking powder.
½ teaspoon of baking soda.
¼ teaspoon of salt.
2 large eggs.
2 large egg whites.
2 teaspoons of freshly grated orange zest.
1 tablespoon of fresh orange juice.
Preparation Instructions:
Preheat your oven to 325°F (160°C).
Lightly oil a baking sheet or coat it with nonstick spray.
In a suitably sized bowl, whisk the flour, sugar, cornmeal, ginger, baking powder, baking soda and salt.
In another bowl, whisk the eggs, egg whites, orange zest and orange juice until blended.
Add the dry ingredients and stir until just combined.
Divide the dough in half and place on a prepared baking sheet.
Form each piece into a 14 inch by 1-½ inch log.
Bake for 25 minutes or until firm.
Transfer to a wire rack and allow to cool.
Reduce the oven temperature to 300°F (150°C).
Diagonally cut the logs into half-inch slices.
Arrange, cut-side down, in a single layer on 2 ungreased baking sheets.
Bake for 18 minutes or until golden brown and crisp.
Allow to cool on a wire rack.
Store in an airtight container.
