Ginger Orange Biscotti recipe
These peppy biscuits would be great for the holidays. Spicy ginger and uplifting orange are a burst of sunshine.
Ingredients:
1 ½ cups all-purpose flour
1 cup sugar
½ cup cornmeal
2 teaspoons ground ginger
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
2 eggs
2 egg whites
1 tablespoon freshly grated orange zest
1 tablespoon orange juice
Directions:
1) Preheat oven to 325°F. Lightly grease a baking sheet.
2) In large bowl, whisk together flour, sugar, cornmeal, ginger, baking powder, baking soda, and salt. In a medium bowl, whisk together eggs, egg whites, zest, and juice. Add dry ingredients and stir until just combined.
3) Roll dough out onto a lightly floured surface; knead 10 times, until dough holds. Divide dough in half; form each half into a 14-by-1½-inch log.
4) Place on prepared baking sheet; bake 25 minutes, until firm. Cool 10 minutes on sheet; reduce oven temperature to 300°F.
5) Cut each log into ½-inch slices; arrange cut-side down on baking sheet. Bake 18 minutes, turning once. Cool on wire rack.
